Mildred Kaufman earned her BS degree in 1947 from Simmons College and her MS degree in nutrition from Columbia University Teachers College in 1952. She was a past professor and chair at the University of North Carolina – Chapel Hill’s Department of Nutrition. In this oral history interview, Kaufman discusses her time as director of nutrition services and programming for the Florida public health system.
