Tez (Yüksek Lisans) -- İstanbul Teknik Üniversitesi, Fen Bilimleri Enstitüsü, 2013Thesis (M.Sc.) -- İstanbul Technical University, Institute of Science and Technology, 2013Bu çalışmada dut antosiyaninleri kitosan kaplı kalsiyum-aljinat tanecikler içine hapsedilerek enkapsüle edilmiş ve tepki yüzey metodu (RSM) kullanılarak enkapsülasyonda kullanılan bazı faktörler optimize edilmiştir. Karadut numunesinin renk, pH ve nem miktarları belirlenmiş ardından dut antosiyaninleri ekstrakte edilmiştir. Hem dut meyvesinin, hem de antosiyanin ekstraktının toplam fenolik madde, toplam flavonoid, toplam antosiyanin miktarları ve antioksidan kapasitesi gibi özellikleri incelenmiştir.
