As antocianinas têm sido utilizadas em formulações de alimentos como corantes e para melhora da funcionalidade dos alimentos, com relação aos efeitos benéficos à saúde já comprovados, no entanto, estas moléculas são instáveis às condições de processamento e armazenamento.
