Antioxidant potential of diet in social welfare houses of silesia

Oxidative stress is the result of an imbalance between the synthesis and removal of free radical molecules from the body. Many epidemiological studies have shown that a diet rich in substances with antioxidant properties can contribute to reducing the risk of many diseases, as well as slow down the effects of aging. The aim of the study was to assess decade menus implemented in a group of 65+ people living in nursing homes. The menus were evaluated for their total antioxidant potential. The research material were decade menus implemented in nursing homes in 2016-2019. In total, 4,640 menus from 58 units were analyzed. The antioxidant capacity of menus was assessed using the ORAC scale (USDA). It was found that the menus were characterized by a small variety of vegetables and fruits and contained small amounts of products with high antioxidant potential. In addition, factors such as the amount of the nutritional rate, the population of the nursing home, or the season of the year affect the antioxidant potential of food rations. Wiele badań epidemiologicznych wykazało, że dieta bogata w substancje o właściwościach antyoksydacyjnych może przyczynić się do zmniejszenia ryzyka wielu chorób, a także spowolnić efekty starzenia. Celem badań była ocena dziesięcioletnich menu wdrożonych w grupie osób powyżej 65 roku życia mieszkających w domach opieki. W menu oceniano ich całkowity potencjał antyoksydacyjny. Materiałem badawczym były menu dekadowe wdrożone w domach opieki w latach 2016-2019. Łącznie przeanalizowano 4 640 jadłospisów z 58 jednostek. Zdolność antyoksydacyjną menu oceniano przy użyciu skali ORAC (USDA). Stwierdzono, że menu charakteryzowało się małą różnorodnością warzyw i owoców oraz zawierało niewielkie ilości produktów o wysokim potencjale antyoksydacyjnym. Ponadto na potencjał antyoksydacyjny racji żywnościowych wpływają takie czynniki, jak wielkość dawki pokarmowej, populacja domu opieki czy pora roku
