Jean-Pascal Simonin. Fluctuations of the grains market in modem time. An essay in formalization and synthesis. Many historians have attributed the importance of the fluctuations in the prices of grains in modern times to the instability of supply and demand, and unsteadiness linked to the self consumption of grains by the producers themselves. This paper points out first the implications of such a hypothesis and especially the application threshold of the Labrousse effect. It then shows that this unsteadiness is nothing but a consequence of the inelasticity of grain demand by all users. It finally demonstrates that self consumption of grains may in some cases stabilize the market. The general conclusion of the study is that the implications...
