El texto se encuentra organizado de la siguiente manera. En el primer capítulo se lleva a cabo la descripción anatómica y fisiológica de la deglución. De esta manera se comprenden los aspectos básicos y fundamentales que implican el acto de comer entendido desde la perspectiva médica. Así, se reconstruye el contexto clínico y el marco de referencia en términos de los conceptos y los problemas que se presentan en relación con la deglución. Principalmente en este punto se profundiza en los tipos de alteraciones que existen en la deglución y los tratamientos que existen para asistirlo y procurar la rehabilitación de dicha capacidad.
