Caracterización de la planta que produce los frutos conocidos como seso vegetal o ackee Blighia sapida (Sapindaceae)

The plant known in Costa Rica as vegetable brain or ackee Blighia sapida Karl Dietrich Koenig, Sapindaceae, produces a fruit that has an edible aril, if it is collected correctly for consumption. The capsule-type fruit for human consumption, must be opened naturally and must be attached to the plant. Otherwise, if the previous steps are not followed, its consumption is very dangerous for human health, because it contains a toxic chemical compound called hypoglycine A. The arils of vegetable brain or ackee, if obtained correctly, are used for the preparation of different dishes, mainly in the province of Limón, Costa Rica. It has a high amount of minerals such as zinc, potassium, phosphorous, iron, ascorbic acid and a small amount of antioxidants, proteins, and an important source of fiber. The ring, which is the only edible part of the vegetable brain or ackee must be boiled for several minutes in water, to eliminate the toxic substances called hypoglycine A. En caso contrario, si no se sigue la regla anterior su consumo es muy tóxico para la salud, ya que posee un compuesto químico llamado hipoglicina A. Los arilos del seso vegetal o ackee, cuando se obtienen de forma correcta, se utilizan para la preparación de diferentes platillos, principalmente en la provincia de Limón. Los arilos del seso vegetal o ackee son ricos en ácidos grasos esenciales como el linoleico, el esteártico, el palmítico, el omega 3 y el omega 6, esta es una gran fuente de vitamina A, B y C. Además, tiene un alto contenido en minerales como el zinc, el potasio, el fósforo, el hierro, el ácido ascórbico y una pequeña cantidad de antioxidantes, proteínas, también es fuente importante de fibra. El arilo que es lo único comestible del seso vegetal o ackee debe hervirse por varios minutos en agua, para eliminar la sustancia tóxica llamada Hipoglicina A. Otras partes de la planta se usan para la preparación de remedios caseros
