Se realizaron análisis químicos de nitrito de sodio, proteína, grasa, humedad, cenizas, carbohidratos y pH, en salchichas de pollo con diferentes tiempos de almacenamiento, y de diferentes lotes de producción de una empresa productora, con el objetivo de identificar los factores que influyen en los niveles finales de nitrito de sodio. Los datos se analizaron por medio de regresiones entre el nitrito de sodio respecto a la composición química proximal, el pH y el tiempo de almacenamiento. Se identificó que el tiempo de almacenamiento fue la única variable que presentó una relación no lineal con el contenido de nitrito de sodio, lo que proporciona evidencia de que existe una relación significativa entre el nitrito de sodio y el tiempo de alma...
