Low molecular weight organic acids such as citric, lactic, malic and tartaric are often used in the food and beverage industry because of their antioxidant and acidulant properties. For this reason, they are generally used to maintain the flavor of the beverages, regulate the pH, mask the unpleasant taste of some compounds, neutralize the sweet taste and/or acidify the taste. Therefore, the development of robust analytical methodologies, fast and with minimal waste generation for the monitoring of these acids in beverages is of great importance because they influence drastically the organoleptic properties, stability and microbiological characteristics of these products.
