This work determined the total coliforms, fungi and Staphylococcus serum coastal outlets sold in the city of Monteria, hygienic conditions were assessed and locative. We performed a cross sectional study using a simple random design (MAS) which required the use of 21 samples with three replication for a total of 63 serum samples tested in 21 outlets for a reliability study of 95%. The results showed 100% contamination of total coliforms, fungi and Sthaphylococus coagulase positive. The assessment of the location of outlets, locative and hygienic aspects of training related to health of the retailers show the impact of results and epidemiological factors relevant to the contamination of the food.
