Transformations which preserve the set of the solutions of Navier-Stokes equations (NS) are calledsymmetries of NS. They form a Lie group called the symmetry group of NS. This group plays animportant role in the description of the physics of the equations (conservation law, wall law, . . . )and turbulence models should remain invariant under the action of this group. In the first part ofthe thesis, an analysis of some standard models from the point of view of symmetries is carried out.Next, a class of subgrid models which, on the one hand, respect the symmetry group of NS and, onthe other hand, conform to the second law of thermodynamics is built.
