The chemical composition of an apple that is responsible for the flavor, aroma and nutritional value, is determined by the metabolic changes that occur as the fruit develops. To gain a better understanding of these metabolic changes, the researchers of MeBioS-KU Leuven (Belgium), mapped them out by performing nutrition experiments with 13C-labelled sugars.
