Although a number of investigators have carried out chemical and physiological studies on the apple, there is no detailed knowledge of the biochemistry of the fruit. Such knowledge is of fundamental interest and is important commercially. This investigation was undertaken to secure information of a fundamentally basic nature which would be of interest in the broader field of plant biochemistry, and also of practical value in that our knowledge of the changes occurring during fruit storage would be extended
