Las condiciones de fermentación para obtener una máxima producción de α-amilasa utilizando salvado de trigo como sustrato de la FES resultaron: humedad inicial 58% (bh), temperatura 35°C, pH inicial 6,2-6,5. En estas condiciones el máximo de producción de enzima es alcanzado entre las 36 y 48 hs de fermentación. Se estudió la influencia del pH inicial en la sintesis de la α-amilasa relacionándose la falta de producción de la misma a pHs inferiores a 5,5 con un posible mecanismo de regulación de la sintesis de la enzima por el pH del medio de cultivo.
