The aim of the study was to review the scientific literature on the content of selected nutrients in potato tubers and the possibility of their use. Potato (Solanum tuberosum L.) is one of the most important edible plants in the world and has become the mostimportant food product due to its valuable nutritional, dietary and health properties. The quality of tubers is determined by the content of chemical components and the low content of toxic compounds. The main component of the potato is starch, about 10–16%, and a protein content of 1.5 to 2.3%, with the amount of complete protein, containing all essential amino acids, being about 1%.
