Recent studies of agricultural rhythms in Ancient Greece tend to point out either the psychological aspects or the influence of the town. This paper emphasizes the technical specificity and the complementarity of each element of these rhythms. In determining his agricultural calendar, the peasant continually makes choices based upon the weather, the availability of labour, and the kind of processing or treatment to be undertaken. In the literature, Hésiode, Xénophon and Théophraste emphasize one or another of these factors. The ensemble of such technical choices imposes a particular sequence of operations (« chaîne opératoire ») to which the peasant himself must then adapt.Amouretti Marie-Claire.
