Consumer acceptance of functional food – since its first appearance in the 30s – has changed significantly, especially in the past two decades resulting from the demographic and public health tendencies of the 80s. Consumption of these foods is concentrated on three main regions in the world, namely the United States, Europe and Japan – however, even in these regions its share fails to exceed 1% of total food consumption and according to predictions its ratio is not expected to grow above 5%.
