The world of oenology is booming and so is the creation of unique wines. But there is a big problem worldwide, which is the climate change that increasingly affects the vineyards and the quality of their grapes. In Spain, we are suffering this problem in the central and southern parts of the country. This influences the pH of the wines, which are increasing significantly, affecting the stability and ageing of the wines.
