Celem badań było opracowanie procesu zagospodarowania serwatki będącej niebezpiecznym z punktu widzenia ochrony środowiska produktem ubocznym przemysłu mleczarskiego. Pierwszym etapem był odzysk białek serwatkowych w nich zawartych. Drugim – było odseparowanie peptydów o właściwościach prozdrowotnych, powstających po hydrolizie strumieni niezdatnych do dalszej separacji samych białek. Wykorzystanie do tego celu układu mikro-, ultra- oraz ultrafine-membran ceramicznych prowadzi do skutecznego zagospodarowanie tego problematycznego medium, przy jedno-czesnym odzyskaniu cennych białek i peptydów pochodzenia serwatkowego.The aim of this research was to elaborate the effective method of whey utilization.
