Pendahuluan: Minyak sawit merah (MSM) diperoleh dari pemurnian crude palm oil (CPO). MSM memiliki warna oranye-merah tua, dan diekstrak dari mesocarp buah pohonkelapa sawit (Elaeis guineensis). MSM telah menarik perhatian dan mulai digunakan untukbeberapa aplikasi pangan.Tujuan: Untuk mengetahui karakteristk fikokimia dan fungsional kualitas minyak sawit merah.Bahan dan Metode: MSM dianalisis kadar air, nilai peroksida,asam lemak bebas (FFA), warna untuk mengetahui sifat fisikokimia, sedangkan profil asamlemak dan kadar β-karoten untuk mengetahui sifat fungsional minyak.
