L´objectif de la présente thèse c´est d'analyser les perceptions des différents acteurs de la filière de la viande bovine sur les normes d'innocuité et de qualité tout au long de la chaîne de production.Cela nous a conduit a considéré en trois niveaux d'analyse : 1) Rendre compte les changements induits par les normes dans les relations de pouvoir entre les principaux acteurs de l´industrie frigorifique ; 2) Mieux comprendre des problèmes de coordination dans la filière liés aux bénéfices (réels ou potentiels) pour la création des normes de qualité et d´innocuité ; 3) Evaluer l´existence de stratégies d´appropriation de la valeur du processus de certification.Dans un contexte de globalisation croissante des échanges, la filière viande bovin...
