The term milk drink has broad sense and can encompass a range of products made from milk and whey, between these fermented dairy beverages with added fruit pulps. In these products the use of whey, a waste product of cheese production, contributes to improving the nutritional value and reduces environmental pollution problems. In this work, the goal was to develop fermented dairy beverages with different concentrations of whey (20%, 30% and 40%), and pineapple flavors graviola, comparing the products obtained with the trademark through sensory tests, for selection of the best formulations, one for each flavor. Then, it was verified that the selected products met the requirements physicochemical and microbiological established in legislation...
