This article presents a characterization of the coffee culture of the Department of Cauca, considering its peculiarity of being studied as an alternative agriculture that promotes a friendly environment strategy, stating that the attributes of coffee in the region have achieved international recognition its quality, since it has a "designation of origin" that makes it more attractive in sophisticated markets that pay more for organic products, while recognizing the important economic growth that has taken the sector in recent years, increasing coffee farmers, coffee farms and cultivated hectares, and the relationship of these variables statistically, while the dynamics of foreign trade is evident, with significant growth in exports of Cauca...
