Yüksek Lisans TeziNaturel sızma zeytinyağı; gıda, kozmetik ve ilaç gibi birçok alanda yaygın olarak kullanılmaktadır. Bu tez çalışmasında, ilk kez Osmaniye bölgesinden elde edilen natürel sızma zeytinyağlarının özellikleri incelenmiştir. Naturel sızma zeytinyağının; serbest yağ asidi (FFA), peroksit sayısı (PV), yağ asit kompozisyonu (FAME), trigliserit kompozisyonu, sterol, vaks, polar-apolar madde, toplam polimerik madde ve tokoferol miktarları, UV-Vis ve FTIR analizleri gerçekleştirilmiştir. Osmaniye Bölgesinden Elde Edilen Naturel Sızma Zeytinyağının % serbest yağ asidi ve peroksit değeri %0,37 ve 4,80 meqO2/kg olarak tespit edilmiştir.
