Investigation of the properties of natural liquid olive oils obtained from the Osmaniye region

Yüksek Lisans TeziNaturel sızma zeytinyağı; gıda, kozmetik ve ilaç gibi birçok alanda yaygın olarak kullanılmaktadır. Bu tez çalışmasında, ilk kez Osmaniye bölgesinden elde edilen natürel sızma zeytinyağlarının özellikleri incelenmiştir. Naturel sızma zeytinyağının; serbest yağ asidi (FFA), peroksit sayısı (PV), yağ asit kompozisyonu (FAME), trigliserit kompozisyonu, sterol, vaks, polar-apolar madde, toplam polimerik madde ve tokoferol miktarları, UV-Vis ve FTIR analizleri gerçekleştirilmiştir. Osmaniye Bölgesinden Elde Edilen Naturel Sızma Zeytinyağının % serbest yağ asidi ve peroksit değeri %0,37 ve 4,80 meqO2/kg olarak tespit edilmiştir. Naturel Sızma Zeytinyağının toplam sterol miktarı 1269,42 ppm, vaks miktarının toplam 359,05 ppm olduğu tespit edilmiştir. Naturel Sızma Zeytinyağının α-tokoferol içeriği bakımından zengin olduğu görülmüştür. Zeytinyağının yüksek oranda OOO (%28 ), OOL (%26) ve POL (%12) trigliseritlerini içerdiği tespit edilmiştir. Osmaniye Bölgesi'nden elde edilen naturel sızma zeytinyağının, Türk Gıda Kodeksi'nde öngörülen serbest yağ asidi ve peroksit sayısı özelliklerini uygun bir şekilde ihtiva ettiği tespit edilmiş olup üretim ve tüketiminin tavsiye edilebilir özellikte olduğu görülmüştür.Extra virgin olive oil is widely used in many fields such as food, cosmetics and medicine. In this thesis, the properties of olive oil obtained from Osmaniye region were investigated for the first time. Free fatty acid (FFA), peroxide value (PV), fatty acid composition (FAME), triglyceride composition, sterol, wax, polar-apolar substances, total polymeric substances and tocopherol contents, UV-Vis and FTIR analyses of natürel extra virgin olive oil were performed on the extra virgin olive. The free fatty acid and peroxide values of extra virgin olive oil obtained from Osmaniye Region were determined as 0.37% and 4.80 meqO2/kg, repectively. The total sterol and the wax amounts of extra virgin olive oil were found to be 1269,42 ppm and 359.05 ppm, repectively. Extra virgin olive oil was observed to be rich in terms of α-tocopherol. It was determined that olive oil contains high percentage of OOO (28%), OOL (26%) and POL (12%) triglycerides. It hes been determined that natural extra virgin olive oil obtained from Osmaniye region contains the characteristics of free fatty acid and peroxide value prescribed in Turkish Food Codex in a suitable and its production and comsumption can be adviseble
