This paper was presented during the International Conference Wine, Vineyards and Civilisations held in Bordeaux in 2005. It is the result of an ethnographic study performed as a complement within the context of a wide-scale public health survey, the object of which was to examine a possible correlation between a moderate consumption of wine and better cerebral ageing.
