Cumplimentar los requerimientos nutricionales e integrar las carnes como un componente saludable en la dieta es un desafío para la industria cárnica. Una opción saludable para las emulsiones cárneas es disminuir la fase grasa (vacuna o porcina) y reemplazarla por aceite vegetal con alto contenido en ácidos grasos insaturados (n3, n6 o n9).
