The work presented in this manuscript is in the field of chemistry and physical chemistry of polysaccharides. A study of the physicochemical properties of xyloglucan under different conditions is carried around and showing the difficulty to obtaining stable solutions at the molecular level. The study also evidenced the possibility of obtaining nanoparticles based on xyloglucan. Monitoring of the enzymatic hydrolysis of xyloglucan in solution by light scattering indicated the aggregation of the degradation products. Imaging by atomic force microscopy revealed the importance of the surface in the degradation phenomenon.
