Oksidatif strese karşı koruyucu görevi olan antioksidanların pek çoğu elektrokimyasal aktiviteye sahip bileşiklerdir. Bunlardan en büyük grubu polifenoller oluşturmaktadır. Bu çalışmada polifenoller grubuna ait 5 adet fenolik asit ile 3 adet sentetik antioksidanın çevrimli voltametri ile elektrokimyasal davranışları incelenmiş, belirlenen optimal koşullarda diferansiyel puls voltamogramları alınmıştır. Birinci oksidatif taramada ortaya çıkan pike veya piklere ait potansiyel, şiddet ve yük parametreleri dikkate alınarak o antioksidanların kapasiteleri hesaplanmış, en yüksek kapasite 100 kabul edilerek diğerlerine bağıl değerler atanmıştır.
