Tłuszcze i oleje, występujące w roślinach mają duże znaczenie gospodarcze i społeczne. Wynika to z ich szerokiego zastosowania w przemyśle kosmetycznym i spożywczym, a także ich znaczącej roli w diecie człowieka. Głównymi składnikami tłuszczy i olejów są triglycerydy. Triglycerydy są estrami cząsteczki glicerolu i trzech długołańcuchowych kwasów tłuszczowych. Badania triglycerydów występujących w olejach roślinnych wykonano przy użyciu chromatografii w stanie nadkrytycznym. Jako fazy stacjonarnej użyto nowej technologii pakowanych kolumn C18, których wypełnienie składało się z powierzchniowo porowatych cząstek.
