PERBANDINGAN KARAKTERISTIK FISIKO KIMIA KARAGENAN DARI RUMPUT LAUT (Euchema cottoni) DENGAN PELARUT AIR KELAPA DAN NIRA SIWALAN

Carrageenan is a group of polysaccharides resulting from the extraction of Rodhophyceae class seaweed using alkaline or water solvents. Eucheuma cottonii seaweed extraction produces two types of carrageenan, namely semirefine carrageenan (SRC) and refine carrageenan (pure carrageenan). The method of extracting and using solvents can determine the quality of the carrageenan produced. One important aspect to produce high quality carrageenan is the use of solvents in the extraction process. In general, the extraction process uses chemical solvents more often than organic solvents. Generally, the solvent used to extract carrageenan is an alkali chemical solvent. The alkali solvent used to extract carrageenan is KOH or NaOH. Carrageenan extraction using KOH has better gel strength than using NaOH solvent. This is because . Extraction of carrageenan with alkaline solvents has been used so that it is necessary to do extraction using natural solvents namely coconut water and siwalan juice. Data analysis method used in this study was comparative descriptive analysis. The comparison used is chemical, physical and organoleptic quality between meatballs using siwalan juice and coconut water through the addition of seaweed (Eucheuma cottoni) composition. The results showed that the yield of carrageenan using siwalan juice yielded the highest yield of 85.03%, while the yield of carrageenan produced in coconut water was highest at 46.10%. In the carrageenan viscosity test using siwalan juice\ud produced the highest yield which is equal to 5250 cps, while the viscosity of carrageenan using coconut water is 7025.00 cps. In the strength test of carrageenan gel using siwalan juice produced the highest gel strength of 32.91 (g / cm2), while the strength of carrageenan gel using coconut water was 486.52 (g / cm). In the test of water content with siwalan roomie produced the highest water content of 12.27%, while the water content using coconut water was 9.46%. In the ash content test using siwalan juice with the highest ash content is 11.63%, while using coconut water is 18.87%
