Bakalářská práce popisuje účinky akrylamidu na lidský organismus. Akrylamid patří mezi látky karcinogenní pro člověka, velmi nebezpečné jsou jeho neurotoxické účinky. Práce se zabývá také vznikem a eliminací akrylamidu v rizikových potravinách. Mezi tyto potraviny patří především hranolky, brambůrky a káva. Součástí práce je dotazníkové šetření týkající se konzumace potravin s potencionálním obsahem akrylamidu.Bachelor's thesis describes the effects of acrylamide on human health.
