Investigation of the level of contamination with mercury in the chickens' body and eggs in the feeds produced in Bursa region.

Bursa Yöresinde, yumurta tavukçuluğu yapılan çiftliklerden sağlanan tavuk ve yumurtalarda, yedikleri yemlerde ve bu yemin karışımına giren yem hammaddelerinde cıva ile kirlilik düzeyleri araştırıldı. Çiftliklerden alınan 91 tavuk, 126 yumurta, 108 yem numunesi ve 78 yem hammaddesinde cıva kalıntı analizi, alevsiz atomik absorpsiyon spektrofotometri yöntemi ile yapıldı. Analiz numunelerinde cıva kalıntılarının rastlantı oranları, yumurtada %88.89, tavukların karaciğer, böbrek ve etinde, yedikleri yemler ve yem hammaddelerinde %100 olarak bulundu. En fazla cıva kalıntısı konsantre yemlerde ölçüldü. Bunu sırasıyla böbrek, karaciğer, yumurta ve etteki cıva düzeylerinin izlediği saptandı. Araştırmada, ortalama cıva kalıntı miktarları, yemde 0.0850 p.p.m., karaciğerde 0.0200 p.p.m., böbrekte 0.0244 p.p.m., ette 0.0134 p.p.m. ve yumurtada 0.0140 p.p.m. olarak belirlendi. Yem hammaddelerinde en fazla cıva kalıntısı balık ununda saptandı. Tavukların karaciğer, böbrek ve yumurta numunelerinin sayısı en fazla 0.011-.0050 p.p.m., yumurta hariç en az 0.0051-0.010 p.p.m. cıva kalıntı limitleri arasında dağılım göstermiştir. Et numunelerinin sayısı en fazla 0.0051-0.010 p.p.m., en az 0-0.005 p.p.m. limitleri arasında yer almaktadır. Yem nümuneleri ise en yüksek sayıda 0.051-0.10 p.p.m. kalıntı limitleri arasındadır. Araştırmamızın bulguları, literatür bilgilerin ışığında değerlendirildiğinde, cıva kalıntılarının diğer ülkelerin kabul ettiği tolerans limitlerini aşmadığı anlaşılmıştır. Bu durumda,yemlerde ve tavuk organizmasında bulunan cıva miktarının bu hayvanların sağlığını ve verimliliğini etkilemeyeceği; aynı zamanda tavuk vücudunda ve yumurtalarında belirlenen cıva düzeylerinin beslenme yoluyla insan sağlığı için bir risk oluşturmayacağı kanısına varılmıştır.In this research mercury residues were determined in the body of hens, in their eggs, in the feeds and their ingredients obtained from the poultry farms localized in BURSA Region. The total of 91 hens, 126 eggs, 108 feed samples and 78 feed ingredients were analysed for the mercurial pollution by the flameless atomic absorption spectrophotometry. The ratio of residue incidence were calculated as 88.89 %. In the eggs and 100 % in the other samples. The highest levels of mercury residues were measured in the feed concentrates which followed by the residue levels in the samples of the kidney, liver, egg and the meat. The mean mercurial residue levels were found to be 0.0850 p.p.m. in the feed concentrate, 0.0200 p.p.m. in the liver, 0.0244 p.p.m. in the kidney, 0.0134 p.p.m. in the meat and 0.0140 p.p.m. in the egg. It was seen that the fish meal samples had the highest residue amongst the feed ingredients. Most of the samples of liver, kidney and egg showed the residue levels between the limits of 0.011-0.050 p.p.m. in maximum and except of egg between 0.0051-0.010 p.p.m. in minimum. The number of the meat samples were highest in the residue limits of 0.0051-0.010 p.p.m. and the lowest in 0-0.005 p.p.m. The highest number of feed samples contained the residues between 0.051-0.10 p.p.m.When the findings were evaluated in the light of literature it seemed that the mercury residues found in all the samples do not exceed the tolerance limits approved by the other countries. In conclusion, these levels of mercurial pollution in the feed and in the body of hens can be considered as harmless for the health of poultry and their productivity. On the other hand, this means that the mercury residue levels of the body of hens and their eggs will not creat any nutritional risk for the puplic health
