Identification and quantification of saturated an unsaturated fatty acid in peach palm fruit (Bactris gasipaes, Kunth) were determinated in the mesocarpo of four varieties grown at the Colombian pacific coast. Oil was extracted using Soxhlet technique, with hexane as solvent. Results show that peach palm fruit has the mono-unsaturated oleic acid predominant in the oil, ranging from 38,0 to 51,9%, and palmitic acid was the most abundant saturated fatty acid, ranging from 34,0 to 39,0%. Among the essential fatty acids, linoleic acid (ω-6) was the most abundant, with values ranging from 2,4 to 8,0%.
