Bu tez çalışması Pamukkale Üniversitesi Bilimsel Araştırma Projeleri tarafından 2018 FBE 048 nolu proje ile desteklenmiştir.Goji berry meyvesinin olgunlaşması süresince çeşitli fizyolojik ve kimyasal değişimler meydana gelmektedir. Bu çalışmanın birinci aşamasında, Denizli bölgesinde yetişen goji berry meyvesinin üç ayrı olgunluk evresinde (yeşil olum, renk dönüm, tam olgunluk) fiziksel olarak 200 tane ağırlığı ve kimyasal olarak pH, suda çözünen kuru madde, titrasyon asitliği, toplam fenolik madde ve karotenoid içeriği belirlenmiştir.
