Les microorganismes sont essentiels au maintien et au fonctionnement des écosystèmes. Dans certains produits alimentaires, la communauté microbienne, composée principalement de levures et de bactéries lactiques, fermente les sucres, affecte positivement les qualités organoleptiques du produit et augmente sa durée de conservation.
