Les émulsions concentrées sont des empilements compacts désordonnés de gouttes d'huile dans de l'eau. A l'instar des suspensions colloïdales ou des mousses, leur comportement rhéologique est celui d'un liquide d'Herschel-Bulkley. A l'échelle microscopique, l'écoulement s'explique par des réarrangements plastiques et localisés des gouttes d'huile. L'objectif de cette thèse est de caractériser et comprendre ces dynamiques microscopiques.En adaptant la technique de Diffusing Wave Spectroscopy (DWS), nous avons mis au point une technique de détection résolue dans le temps et dans l'espace des réarrangements plastiques de gouttes.
