Analysis and chemical and sensory comparison of wines

La nostra comarca és una terra on el món de la vinya i el vi té una gran importància cultural i econòmica. Ara bé, no tots els vins són iguals, hi ha diferents varietats de raïms i diverses maneres d’elaborar el vi. Aquests fets impliquen que les begudes resultants tinguin unes característiques úniques tant químicament com sensorialment. En aquest treball es comparen dos vins blancs i un de negre. Això permet, primerament, tractar les varietats de chardonnay, garnatxa blanca, merlot i cabernet; en segon lloc, estudiar diverses maneres d’elaboració; en tercer lloc, analitzar i comparar l’acidesa, l’alcohol, les característiques cromàtiques, la conductivitat, el coure i el ferro, el pH, el diòxid de sofre i la matèria reductora; i finalment analitzar sensorialment el color, l’aroma, i el tast en boca.Our county is a land where the world of vinyeards and wine are of great cultural and economic importance. However, not all wines are the same, there are different varieties of grapes and diverse ways of elaborating wine. This implies that the obtained results have unique characteristics both chemical and sensorial. For this article, two white and one red wine have been compared. This allows a study of the varieties Chardonnay, white Grenache, Merlot and Cabernet. It also studies diverse techniques of elaboration and an analysis and comparison of acidity, alcohol, chromatic characteristics, conductivity, copper and iron, Ph, sulfur dioxide and reductive matters.
