This article examines the way in which flavors participate in cultural mediation or, in other words, how the sense of taste comes by sampling. We analyze sensorial and even synesthetical modalities in both cultural institutions and contemporary artistic creations. Between communication, mediation and artistic project, we will show through five examples how flavor is being presented to the public. Various study cases are examined : proposing a diverse access to art and stirring up desire (La Piscine, Le Lait) ; creating senses correspondences and sparking off imagination and comprehension (Mac/ Val) ; discovering and appreciating culinary design creations (La cuisine) ; provoking a collective happening around a meal (Afiac).
