Drying and storage

Drying and storage are the subjects two books in a continuing series of United Nations Fund for Women (UNIFEM) Food Cycle Technology Source Books, designed to help increase productivity and improve technology choice. Drying deals with the preservation of food crops by drying which can help to increase food security or provide a source of additional income for producers and women's groups. The book is an introduction to the principles of drying and an indication of the range of technologies available along with case studies examining the use of improved drier designs. Storage deals with the use of appropriate storage technologies as an important way of improving food security and lowering the risk of famine in the countries of the South. The book focuses on the storage of the staple commodities such as grains and root crops, but it also covers other major food groups such as oils, fish, fruit and vegetables. The techniques in the book are illustrated well by means of line drawings and there is a section at the end of the book listing organizations in the continents in the developing world that can give further help in the subject area.
