barmYou'd have to make barm first to make bread..Then when you went to make bread, you'd take a cup of the mixture ("barm") and some water and flour, and you'd put that in the batter, and you'd let it rise for about an hour, somewhere where it was warm. That was sponge we used to call that. Then you'd take, this would be in the evening now, you'd be making bread, and you'd take three or five sieves of flour, and you'd throw in the sponge and a bit of milk and water and you'd work that with your hands.
