Composition and quality analysis of raw organic milk of Lithuanian Black-and-White cow

Aim of the work: to investigate the composition and quality of organic milk in Lithuanian Black and White Cows. The research was done in one of the Lithuanian Black-and-White dairy cow farms. The study was conducted in 2019 during the barn (February) and pasture (June) periods. A total of 40 clinically healthy cows were selected for the study. The cows were divided into four lactation groups (first, second, third and fourth) and into two groups by seasons (barn and grazing). It was found that during the barn period there was 1.83% (p< 0.05) more milk fat content in the cow milk than in the grazing period. Analyzing the data between grazing and barn period, the milk content of fourth lactation cows was 15.3% significantly higher (p< 0.05) than the first lactation cows. The milk protein content during the barn period was 4.93% (p< 0.05) higher than the grazing period. During the barn period lactose content in milk was 1.8% (p< 0.05) higher in comparison with pasture milk. The milk lactose content did not change during the different lactations in barn and grazing periods. During the barn period, urea concentrations in milk were 8.5% (p< 0.05) higher than in grazing type of milk. The lowest urea level (10.8 mg/100 ml) was discovered in the first lactation cows milk and the highest level (13.5 mg/100 ml) was discovered in the third lactation cows milk. When compared to other indicators Somatic cell count was lower in the barn period than in the grazing period. The lowest somatic cell count in milk was discovered during the second lactation in cows milk both during pasture (121 thousand/ml) and barn (101 thousand/ml) period
