The aim of the thesis was to evaluate the perspectives of grape marc use and processing. There are numerous possibilities of grape marc utilization. For example the production of grappa (pomace brandy), animal feed, compost, oils, etc. Practical part is focused on experimental determination of selected physical parameters (moisture, bulk density, proportion of stem in grapes, share of seeds and share of husks) for selected pomace samples. Those parameters were investigated in varieties Muller Thurgau, Grüner Veltliner, Chardonnay, Blaufrankisch, Cabernet Moravia and Dornfelder in both years, 2014 and 2015, characterized by very diverse weather conditions.
