This thesis focuses on defining basic defects and diseases of wine. It introduces factors affecting quality of produced wine following by definition of the basic terms such as defects and disease of wine. Particular defects are described and their causes listed, and the changes of defected wine are described in the area of aroma, taste and appearance. By each particular defect or disease there are suggestion how to prevent them and also there are mentioned methods to eliminate these defects and diseases with focus on presenting the up to date trends
