In the first part of this bachelor graduation theses is introduced general information on food hygiene as a specific part of hygiene. The basic concepts and foodborne diseases are specified, including the most common causal organisms and preventative measures. The main competent authorities in the field of food safety are mentioned, as well as the legislative framework for official controls. There are also described principles and types of official controls. In the second part, there is concretely described, how the official control in public catering premises is carried out, step by step
