Rates of volumetric shrinkage can vary between agricultural products. Normally grains, such as the soybean, which have a simple morphological structure and low water content, have low rates of shrinkage when drying. However, quantification and determination can help to optimise the drying process. The aim of this study therefore, was to evaluate the fit of different mathematical models, identifying the one that best represents the phenomenon of unit volumetric shrinkage and weight in soybeans dried at two different temperatures.
