Man is not merely a physiological organism, but is also a rational and social being. Therefore, problems of food choice and of other behaviour related to food have to be considered from a physiological, as well as from a social, cultural or economic point of view.In the first chapter of this thesis a review is given of the principal cues of food behaviour and of the factors determining food choice.Hunger appears to be the main physiological motive for food intake, while appetite is more related to its psychological regulation.
