Microbiological testing of chilled fresh-cut melon without and with chitosan coatings was conducted. In any analyzed samples are not detected pathogens: Escherichia coli, coliforms, Salmonella spp., Staphylococcus aureus, Listeria monocytogenes above the permissible limits independent of used raw materials and process steps. There aren’t pathogenic microorganismsin quantities that threaten the consumer health after 5 days shelf life of chilled fresh cut melonand 7 days for both chitosan coating and chitosan with calcium lactate. The predominant microflorain products and also factor for microbial spoilage are molds and yeasts
