The purpose of this research is to determine the cellulose level found in stem waste of banana kepok (Musa paradisiaca formatypica) and the optimum condition as well as level of bioethanol content that being produced. In this study used Cellulose from stem wastes of banana kepok fermented by simultaneous saccharification and fermentation method (SFS). The process of hydrolysis cellulose into glucose and subsequently become bioethanol held simultaneously by using the bacterium Clostridum acetobutylicum. The results showed that the content of banana stem cellulose wastes of 46.38% and the optimum condition of fermentation on the 10th day with pH 6.0 resulted in bioethanol content of 13.5%
