While consumers are increasingly interested in the sustainability characteristics of their food products, it is difficult for consumers to make the ‘right’ food choice. Their sustainability concerns are often not translated into actual behavior. This article discusses the reasons of this attitude-behaviour gap. Next, we discuss some actions that policy makers and food supply chain actors can undertake to stimulate certain food consumption behaviours on which there is consensus that they unambiguously improve food sustainability and thus people’s well-being.status: publishe
