The following research work was conducted with the purpose of isolating and identifying yeasts of the Saccharomyces gender from the tomato tree fruit (Solanum betaceum), by macroscopic, microscopic and biochemical identification analysis in addition to screening tests, through the use of the selective culture medium Lysine. Two strains of Saccharomyces cerevisiae were identified from the 57 samples of mature tomato tree fruit, corresponding to 6% of total isolated yeast strains, and the remaining 94%, corresponding mainly to Rhodotorula, Candida and Cryptococcus genders.
